We have a bedroom where the ceiling rafters are on show. They are perfectly level and are at 40cm centres.
I would like to lose them by creating a ceiling. Here in UK we would plasterboard and skim coat a plaster finish. How would I do this in Tenerife (I have never seen plaster there).

I have had false ceilings with LED downlighters installed in two bathrooms.  Both were constructed from plasterboard then skimmed.  So it's not a problem - you just need to find a builder who will do it for you.  I know an excellent one in Los G. We had false ceiling and down lights put in, via plasterboard and skimmed ceiling. Kevin Newman (Elvis) did ours.
